Instructions

  1. Preheat oven to 350°F (175°C). Peel peaches using a paring knife or vegetable peeler, then slice about 1/2-inch thick.
  2. Toss peach slices with granulated sugar, lemon juice, vanilla extract, cinnamon, and cornstarch in a medium bowl. Let rest for 10 minutes.
  3. Melt butter in a small saucepan over medium heat, stirring constantly until it foams and turns a deep golden brown with a nutty aroma (about 5-7 minutes). Pour into a heat-safe bowl to cool slightly.
  4. In a separate bowl, combine rolled oats, flour, brown sugar, salt, and cinnamon. Pour warm brown butter over dry ingredients and stir until evenly moistened and crumbly.
