  • 1/2 cup granulated sugar (100g)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cornstarch
  • 1 1/2 cups all-purpose flour (190g)
  • 1 cup rolled oats (90g)
  • 3/4 cup packed brown sugar (150g)
  • 3/4 cup unsalted butter, cold and cubed (170g)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, combine sliced peaches, granulated sugar, lemon juice, cinnamon, and cornstarch. Toss gently until peaches are evenly coated. Set aside to macerate for about 10 minutes.
  3. In a large bowl, whisk together flour, rolled oats, brown sugar, nutmeg, and salt. Add cold, cubed butter and cut it into the dry ingredients using a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized pieces. Stir in chopped nuts and vanilla extract if using.
  4. Press half of the oat crumble mixture evenly into the prepared baking pan to form the base.
  5. Spread the peach filling evenly over the crust, draining excess juice if very juicy.
  6. Crumble the remaining oat mixture over the peach layer without pressing down.
  7. Bake for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbly. Check after 35 minutes to avoid over-browning.
  8. Remove from oven and cool completely in the pan on a wire rack to allow bars to set.
  9. Cut into bars once cooled. Serve as is or with vanilla ice cream or whipped cream if desired.

Notes

Use ripe but firm peaches to avoid soggy bars. Keep butter cold for a crumbly texture. Let bars cool completely before cutting to prevent a gooey mess. For vegan version, substitute butter with coconut oil and use vegan sugar. Frozen peaches can be used if thawed and drained. To catch drips during baking, place a baking sheet on the rack below.
