A quick and easy creamy buffalo chicken dip with a spicy kick and tangy blue cheese crumbles, perfect for game days and casual gatherings.

Ingredients

Scale
  • 2 cups cooked shredded chicken (about 280 g)
  • 8 ounces cream cheese, softened (225 g)
  • 1/2 cup ranch dressing (120 ml)
  • 1/2 cup buffalo hot sauce (120 ml)
  • 1 cup shredded cheddar cheese (100 g)
  • 1/2 cup blue cheese crumbles (75 g)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and allow it to reach temperature while preparing the dip.
  2. In a medium bowl, combine softened cream cheese with ranch dressing using a spatula until smooth and creamy.
  3. Stir in buffalo hot sauce until the mixture is evenly tinted orange and spicy.
  4. Mix in garlic powder, onion powder, salt, and pepper to taste.
  5. Fold in shredded cooked chicken and shredded cheddar cheese until well combined.
  6. Scrape the mixture into a greased 8×8-inch baking dish.
  7. Sprinkle blue cheese crumbles evenly over the top.
  8. Bake for 20-25 minutes, or until edges are bubbly and the top is lightly golden.
  9. Let the dip rest for 5 minutes before serving to thicken and make scooping easier.

Notes

If cream cheese is not soft enough, microwave in 10-second bursts until pliable for smoother blending. Add a splash of buffalo sauce to shredded chicken if dry. Watch baking time closely to avoid burning edges. For extra bubbly top, broil 1-2 minutes but watch carefully to prevent bitterness from blue cheese. Let dip cool slightly before serving for easier scooping.
