  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 garlic cloves, minced
  • 1/2 cup chopped sun-dried tomatoes (packed in oil, drained, reserve some oil)
  • 1 cup chicken broth (240 ml, homemade or low sodium recommended)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (or fresh basil and oregano)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful of fresh basil, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and black pepper. (Prep time: 5 minutes)
  2. Heat a large skillet over medium-high heat and add 1 tablespoon olive oil and 1 tablespoon reserved sun-dried tomato oil. When the oil shimmers, it’s ready. (Heat time: 2-3 minutes)
  3. Add the chicken breasts and cook for 5-6 minutes on one side without moving. Flip and cook another 4-5 minutes until golden and cooked through (internal temperature 165°F / 74°C). Remove and set aside on a warm plate. (Cooking time: 10-12 minutes)
  4. Lower heat to medium. Add remaining olive oil if pan is dry. Add minced garlic and chopped sun-dried tomatoes. Stir for 1 minute until fragrant but not burnt.
  5. Pour in chicken broth and scrape up browned bits from the pan. Let simmer for 2-3 minutes to reduce slightly.
  6. Stir in heavy cream and grated Parmesan cheese. Add dried Italian herbs and red pepper flakes if using. Simmer gently, stirring, until sauce thickens and coats the back of a spoon, about 4-5 minutes.
  7. Nestle chicken breasts back into the sauce. Spoon sauce over the top. Let warm together for 2-3 minutes to meld flavors. (Final cook: 3 minutes)
  8. Remove from heat, sprinkle chopped fresh basil over the top, and serve immediately.

Notes

If sauce gets too thick, add a splash more broth or cream to loosen it. Do not overcrowd the pan to ensure proper searing. Use room temperature chicken for even cooking. Reserve sun-dried tomato oil for extra flavor. Grate Parmesan fresh for best melting. Add fresh herbs at the end for bright flavor. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
