  • 1 cup (100g) shredded sharp cheddar cheese
  • 1 cup (120g) all-purpose flour
  • 4 tablespoons (60g) unsalted butter, cold and cubed
  • 2 tablespoons everything bagel seasoning
  • ½ teaspoon salt
  • 23 tablespoons cold water
  • Optional: ¼ teaspoon smoked paprika
  • Optional: 2 tablespoons finely grated Parmesan cheese

Instructions

  1. Grate the cheese using a coarse grater to shred about 1 cup (100g) of sharp cheddar cheese.
  2. In a mixing bowl, combine 1 cup (120g) all-purpose flour, ½ teaspoon salt, 2 tablespoons everything bagel seasoning, and smoked paprika if using. Stir to blend.
  3. Add 4 tablespoons (60g) cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or two knives to cut the butter in until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese. Then, add cold water 1 tablespoon at a time, mixing gently until the dough just comes together. Avoid overworking it.
  5. Gather the dough into a ball, wrap it in plastic wrap, and refrigerate for 15-20 minutes.
  6. On a lightly floured surface, roll the dough out thinly—about 1/8 inch (3mm) thick.
  7. Using a sharp knife or pizza cutter, slice the dough into squares or rectangles roughly 1.5 inches (4cm) wide. Transfer to a parchment-lined baking sheet.
  8. Lightly dust the tops of the crackers with additional everything bagel seasoning.
  9. Preheat oven to 350°F (175°C). Bake crackers for 15-18 minutes or until golden and crisp around the edges.
  10. Let crackers cool completely on a wire rack before storing in an airtight container.

Notes

Keep butter and water cold to ensure flaky, crispy crackers. Roll dough thinly for best crispness. Watch crackers closely near the end of baking to avoid burning. If crackers are soft after baking, return to oven for a few minutes. Freshly grated cheese melts better than pre-shredded. Dough can be frozen for up to 2 months.
