Instructions

  1. Wash and dry 2 medium zucchinis. Cut off the ends and slice into 3-inch sticks about 1/2 inch thick. Pat dry with paper towels to remove excess moisture. (Approx. 5 minutes)
  2. Set up three shallow bowls: one with 1/2 cup all-purpose flour mixed with 1/2 teaspoon salt, one with 2 beaten large eggs, and the last with 1 cup panko breadcrumbs, 1/2 cup grated Parmesan, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, and 1/2 teaspoon freshly ground black pepper.
  3. Working in batches, dredge each zucchini stick first in the flour mixture, shaking off excess. Then dip into the beaten eggs, letting excess drip off. Finally, coat evenly in the Parmesan-panko mixture, pressing lightly so it sticks well. Place coated sticks on a plate. (Approx. 10 minutes)
  4. Preheat the air fryer to 400°F (200°C) for about 3-5 minutes.
  5. Spray the air fryer basket lightly with olive oil spray. Arrange zucchini fries in a single layer without touching. Spray tops lightly with olive oil spray. Cook at 400°F (200°C) for 10-12 minutes, flipping halfway through. Watch closely the last 2 minutes to prevent burning.
