  • 3 large eggs, room temperature

  • Optional: pinch of salt
  • Optional: 1 teaspoon vanilla extract
  • Optional for frosting: vanilla buttercream or cream cheese frosting (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your pans by greasing them or lining with parchment paper.
  2. In a large mixing bowl, whisk together the flour and sugar. If using, add salt and vanilla extract now.
  3. In a separate bowl, beat the eggs lightly, then stir in the melted butter. Ensure the butter is not too hot to avoid cooking the eggs.
  4. Slowly pour the wet ingredients into the dry mix, stirring gently. Fold with a spatula until just combined to keep the cake tender.
  5. Divide the batter evenly into six small bowls.
  6. Add a different gel food coloring to each bowl and stir gently until the colors are vibrant and uniform.
  7. Pour each colored batter into its own prepared pan and smooth the tops lightly with a spatula.
  8. Bake for 12-15 minutes, checking doneness by inserting a toothpick that comes out clean. Start checking at 12 minutes.
  9. Cool layers on racks for 10 minutes, then gently remove from pans and let cool completely.
  10. Once cooled, stack the layers with your chosen frosting between each one. Apply a crumb coat first if desired, then add another layer of frosting all around.
  11. Decorate as you like with sprinkles, edible glitter, or keep it simple.
  12. Chill the cake for 30 minutes before slicing to help it set.

Use room temperature eggs for better mixing. Gel food coloring is preferred over liquid to avoid thinning the batter. Avoid overmixing to keep the cake tender.
