Instructions

  1. Preheat your cooking surface to medium-high heat (about 400°F) if grilling, or preheat oven to 400°F.
  2. In a mixing bowl, combine shrimp with olive oil, minced garlic, lemon juice, salt, and pepper. Toss gently to coat evenly.
  3. Tear off large squares of heavy-duty aluminum foil (about 12×12 inches). Divide shrimp mixture evenly among foil sheets, placing in center. Sprinkle chopped parsley on top if using. Fold foil over shrimp and seal edges tightly to create packets.
  4. Place foil packets on grill or baking sheet. Cook for 8-10 minutes until shrimp are pink and opaque, avoiding overcooking.
  5. Carefully open one packet to check doneness. Serve immediately, straight from foil or transferred to plates.
