  • 2 tablespoons chipotle peppers in adobo sauce
  • 2 cups (400g) cooked rice (white, brown, or cauliflower rice)
  • 1 cup (170g) black beans, drained and rinsed
  • Juice of 1 fresh lime

Instructions

  1. Pat dry chicken breasts and slice into thin strips or bite-sized pieces (about 5 minutes).
  2. In a small bowl, mix chipotle peppers in adobo with 1 tablespoon lime juice, mashing peppers slightly to spread heat evenly (2 minutes).
  3. Heat 1 tablespoon oil in a skillet over medium-high heat. Add chicken pieces in a single layer and sear for 3-4 minutes without moving to get a golden crust. Flip and cook another 3 minutes until cooked through (6-8 minutes total).
  4. Pour chipotle-lime mixture over chicken and stir well to coat. Cook together for another 2 minutes, stirring occasionally to prevent burning.
  5. Warm pre-cooked rice and black beans separately in pans or microwave, covering loosely to retain moisture (5 minutes).
  6. Assemble burrito bowls by layering rice, black beans, and chipotle chicken. Squeeze fresh lime juice over the top (3 minutes).
  7. Add optional toppings such as chopped cilantro, diced avocado, or shredded cheese if desired.

Notes

Do not overcrowd the pan when cooking chicken; cook in batches if needed. If sauce thickens too much, add a splash of water to loosen. Adjust chipotle pepper amount to control spice level. Rinse canned black beans well to avoid tinny taste. Fresh lime juice brightens the dish and balances smoky heat.
