Ingredients

  • Manchego cheese, 4 oz
  • Brie cheese, 4 oz
  • Peppered salami, 4 oz
  • Prosciutto, 3 oz
  • Honeycomb, 2 oz
  • Fig jam, 3 tablespoons
  • Crackers, 1 cup (mix of plain water crackers and whole wheat crackers)
  • Fresh grapes, 1/2 cup (red or green)
  • Dried apricots, 1/4 cup
  • Almonds, 1/4 cup (raw or roasted)
  • Fresh rosemary sprigs, optional (for garnish)

Instructions

  1. Prepare the cheese (2 minutes): Take the Manchego out of the fridge and let it sit at room temperature for 5 minutes. Using a paring knife, cut the Manchego into thin triangles, about 1/4 inch thick. For the brie, leave it in one wedge or cut it into two smaller wedges. Place the brie on the board with the rind facing up.
  2. Prepare the meat (2 minutes): Remove the peppered salami from its packaging. If the slices are stuck together, gently separate them. Fold each slice of salami in half, then in half again, creating a small, ruffled pile. For the prosciutto, gently drape each slice over the back of your hand, then lay it on the board in a loose, wavy ribbon.
  3. Arrange the sweet components (3 minutes): Spoon the fig jam into a small ramekin and place it towards the center or slightly off-center on the board. Break the honeycomb into 2-3 smaller pieces using your fingers or a knife. Place the honeycomb pieces near the brie.
  4. Add the accompaniments (4 minutes): Scatter the crackers around the board, creating little clusters. Place the grapes in a small pile near one corner. Add the dried apricots and almonds in separate small piles.
  5. Garnish and final touches (2 minutes): Tuck a few sprigs of fresh rosemary between the ingredients for a pop of green and a subtle fragrance. Fill any empty gaps with a few extra crackers or almonds. Serve immediately at room temperature.

For the best texture, look for a Manchego that is not too crumbly. For the honeycomb, find a local beekeeper or check the specialty section of your grocery store. If you can’t find honeycomb, substitute with a high-quality liquid honey. For the fig jam, avoid brands with added corn syrup. You can also add a few cornichons or pickled onions on the side for a tangy pop.
