Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 8-inch round cake pan thoroughly with butter or non-stick spray. Line with parchment paper if available.
  2. In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, baking powder, and salt.
  3. In a separate bowl, beat the eggs and sugar vigorously with a whisk for 3-4 minutes until pale, thick, and increased in volume.
  4. Slowly whisk in the whole milk, melted butter (not hot), and vanilla extract until combined.
