A refreshing and easy-to-make frozen peach bellini slushy that’s perfect for hot pool days. Made with frozen peaches, prosecco, and a splash of lemon juice, it’s a light, bubbly, and stylish summer drink.

  • 1 cup (240 ml) chilled prosecco or any sparkling wine
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 tablespoon (15 ml) simple syrup (optional)
  • 1 tablespoon (15 ml) peach schnapps or peach liqueur (optional)
  • 1/2 cup (120 ml) ice cubes (optional)
  • Fresh mint or peach slices for garnish

Instructions

  1. Measure out 2 cups (300 grams) of frozen peaches, 1 tablespoon (15 ml) fresh lemon juice, and optional simple syrup and peach liqueur. Make sure the prosecco is chilled (about 1 cup or 240 ml).
  2. In your blender, combine frozen peaches, lemon juice, simple syrup (if using), peach schnapps (if using), and ice cubes (if using). Blend on high for about 30-45 seconds until smooth but still thick.
  3. Stop and check the consistency. The mixture should be slushy, not watery. If too thick, add a splash of prosecco or cold water; if too thin, add a few more frozen peaches or ice cubes.
  4. Pour the blended peach mixture into a large bowl or pitcher. Slowly add the chilled prosecco, folding gently with a spoon or spatula to keep the bubbles intact.
  5. Pour into glasses and garnish with fresh peach slices or a sprig of mint. Serve immediately and enjoy poolside.

Notes

Fold in prosecco gently to preserve bubbles and avoid blending prosecco with peaches to prevent the drink from going flat. Use frozen peaches to avoid watering down the drink with ice. Adjust sweetness carefully as prosecco adds natural sweetness.
