  • 1 to 2 tablespoons (15 to 30 ml) oil or butter
  • Onions, garlic, or diced vegetables
  • Protein such as chicken, beef, tofu, or beans, cut into even pieces
  • Optional thickening agents: flour, cornstarch, or cream (added after pressure cooking)

Instructions

  1. Check and clean the Instant Pot inner pot for leftover food or burnt bits; wash if needed. (5 minutes)
  2. Turn on ‘Sauté’ function, add 1 to 2 tablespoons of oil or butter, heat until shimmering, then sauté onions, garlic, or aromatics, stirring often. (5-7 minutes)
  3. Deglaze the pot by pouring about ½ cup (120 ml) of liquid and scraping up browned bits with a wooden spoon until the bottom is clean. (2-3 minutes)
  4. Add protein, vegetables, and remaining liquid ensuring at least 1 cup (240 ml) total liquid. (2 minutes)
  5. Seal the lid, set valve to ‘Sealing’, and select appropriate pressure cooking setting. Cook according to recipe time.
  6. Release pressure naturally or use quick release depending on recipe. (5-15 minutes)
  7. If burn warning appears, turn off pot, open lid carefully, deglaze again, add more liquid if needed, and restart cooking.

Notes

Always deglaze the pot after sautéing to prevent burn errors. Avoid thickening agents before pressure cooking; add them after. Keep enough liquid (at least 1 cup) to generate steam. Clean sealing ring and float valve regularly to prevent errors. If burn error occurs, turn off pot, cool slightly, open lid carefully, deglaze, add liquid, and restart.
