  • 1/2 cup cooked bacon or sausage, chopped (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • Non-stick cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease the muffin tin thoroughly with non-stick spray or olive oil.
  3. Chop all veggies and cooked meat into small, uniform pieces.
  4. In a mixing bowl, whisk 8 large eggs with 1/4 cup milk until well combined but not foamy.
  5. Add cheese, diced veggies, meat (if using), salt, pepper, and onion powder. Stir gently to combine.
  6. Pour the mixture evenly into each muffin cup, filling about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes, starting to check at 18 minutes with a toothpick; it should come out clean and tops lightly golden.
  8. Remove the muffins from the oven and let cool for 5 minutes.
  9. Use a small knife or spatula to loosen edges, then gently pop muffins out.
  10. Serve warm immediately or cool completely before storing.
