  • ½ cup natural peanut butter (125g)
  • ¼ cup honey (85g)
  • ½ cup mini chocolate chips (90g)
  • 2 tbsp ground flaxseed (14g)
  • 1 tsp vanilla extract (5ml)
  • A pinch of salt
  • Optional: chopped walnuts or raisins

Instructions

  1. Gather and measure your ingredients.
  2. In a mixing bowl, combine the rolled oats, ground flaxseed, mini chocolate chips, and a pinch of salt. Stir lightly to distribute evenly.
  3. Add the peanut butter, honey, and vanilla extract to the dry mix. Mix until the mixture holds together but isn’t overly sticky. Adjust with more honey or peanut butter if too dry.
  4. Scoop out small portions (about 1 tablespoon or 15g) and roll them into bite-sized balls. Lightly grease hands with water or oil if needed.
  5. Place the formed energy bites on a baking sheet lined with parchment paper.
  6. Chill in the fridge for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to one week or freeze for longer storage.

Notes

Use natural peanut butter without added sugars or oils for best texture. Adjust mixture consistency by adding honey or oats as needed. Chilling is essential for firm bites. Can substitute peanut butter with sunflower seed butter for nut-free version. Store refrigerated or frozen for freshness.
