  • 1 cup (150 g) fresh strawberries, washed and halved or quartered
  • ½ cup (120 ml) low-sugar granola
  • 1 tablespoon (15 ml) honey (or maple syrup for vegan option)
  • 46 mini rice cakes, plain or lightly salted

Instructions

  1. Prepare the Fruit (5 minutes): Rinse fresh strawberries under cold water, pat dry, and slice into halves or quarters. If using other berries like blueberries, rinse and drain.
  2. Mix the Cottage Cheese and Honey (2 minutes): In a medium mixing bowl, combine 1 cup of small-curd cottage cheese with 1 tablespoon of honey. Stir gently until evenly incorporated and creamy.
  3. Assemble the Snack Boxes (3-5 minutes): Spoon cottage cheese mixture into one compartment of the snack box. Place sliced strawberries or mixed berries in another compartment. Add ½ cup of granola in a separate section. Arrange 4 to 6 mini rice cakes in the last compartment.
  4. Final Touches & Pack (1 minute): Close the boxes tightly if packing for later and store in the refrigerator. Keep granola separate until serving to maintain crunch. Optionally, add mini chocolate chips or dried fruit pieces to the granola section.

Notes

Do not mix granola with cottage cheese until serving to avoid sogginess. Drain watery cottage cheese slightly before use.
