A quick and easy snack box combining classic turkey club flavors with a creamy hummus twist, perfect for packable lunches and on-the-go meals.

  • 6 oz turkey breast slices (thinly sliced, deli-style)
  • 4 slices crispy cooked bacon
  • 1 cup cherry tomatoes, halved
  • 4 mini sandwich rolls or slider buns
  • 1 medium cucumber, thinly sliced
  • 1 cup leafy greens (butter lettuce or baby spinach)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tbsp olive oil (extra virgin recommended)
  • 2 tbsp tahini
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • Salt to taste (start with 1/2 tsp)
  • 23 tbsp water (to thin hummus as needed)

Instructions

  1. Prepare the Creamy Hummus (10-12 minutes): In a food processor, combine drained chickpeas, tahini, minced garlic, fresh lemon juice, and salt. Pulse to combine.
  2. Slowly drizzle in olive oil while processing until smooth. Add water one tablespoon at a time if hummus is too thick. Adjust salt or lemon juice to taste. Set aside.
  3. Cook the Bacon (10 minutes): In a skillet over medium heat, cook bacon strips until crispy, about 3-5 minutes per side. Drain on paper towels and cut each strip in half.
  4. Prepare the Veggies and Rolls (5 minutes): Halve cherry tomatoes, slice cucumber thinly, and wash and dry leafy greens. Slice mini rolls horizontally leaving a hinge.
  5. Assemble the Snack Boxes (5-7 minutes): Spread a small spoonful of hummus inside each roll over the bottom half.
  6. Layer turkey slices, two halves of bacon, cucumber slices, cherry tomatoes, and leafy greens inside each roll. Close gently.
  7. Arrange mini sandwiches in one compartment of snack box. Place leftover veggies and a small container of hummus in other compartments.
  8. Pack and Store: Seal snack boxes and refrigerate if not eating immediately. Best consumed within a few hours.

Notes

For best texture, spread hummus just before serving to avoid soggy bread. Hummus can be made up to 3 days ahead and stored refrigerated. Substitute gluten-free buns or lettuce wraps for gluten-free option. Bacon can be swapped with turkey bacon or vegetarian alternatives like smoked tempeh or grilled halloumi. Add water or olive oil gradually to hummus for ideal spreading consistency.
