Ingredients

Scale
  • 4 large eggs, preferably free-range or organic
  • 1/4 cup (60 g) small-curd cottage cheese
  • 1 cup (120 g) whole wheat flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1 cup (240 ml) whole milk or dairy-free alternative (almond or oat milk)
  • 2 tablespoons melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed
  • 1 teaspoon olive oil
  • Handful of fresh baby spinach
  • Shredded cheddar cheese or favorite melting cheese (optional)
  • Ground cinnamon (optional)
  • Ground nutmeg (optional)
  • Salt and pepper to taste
  • Pure maple syrup
  • Fresh berries (blueberries, raspberries, or strawberries)
  • Honey or agave (optional, for yogurt or drizzling)
  • Greek yogurt (optional, for serving)

Instructions

  1. Prepare the batter for pancakes: In a mixing bowl, combine whole wheat flour, baking powder, and a pinch of salt. In another bowl, whisk together milk, 1 large egg, melted butter, and vanilla extract. Slowly mix wet ingredients into dry, stirring until just combined. Fold in mashed banana. Let the batter rest for 5 minutes.
  2. Cook pancakes: Heat a non-stick skillet over medium heat and lightly grease with butter. Pour 1/4 cup batter per pancake. When bubbles form on the surface and edges look set (about 2-3 minutes), flip carefully and cook another 2 minutes. Keep cooked pancakes warm in a low oven (around 200°F).
  3. Make creamy scrambled eggs: Crack 4 eggs into a bowl and add cottage cheese. Whisk gently until combined but not fully smooth. Melt butter in a skillet over low heat. Pour in eggs and cook slowly, stirring continuously. Remove from heat just before fully set. Season with salt and pepper.
  4. Sauté spinach: In a small pan, heat olive oil and add fresh baby spinach. Sauté over medium heat until just wilted, about 2-3 minutes. Season lightly with salt.
  5. Assemble the plate: Stack pancakes, drizzle with maple syrup, and top with fresh berries. Add scrambled eggs with cottage cheese and a side of sautéed spinach. Optionally, add a dollop of Greek yogurt with honey.
  6. Brew coffee or tea to complete the meal.

Notes

Prep some ingredients the night before to save time, such as mashing bananas or measuring dry ingredients. Cook scrambled eggs on low heat to keep them creamy and avoid rubbery texture. Don’t overmix pancake batter to keep pancakes light and fluffy. Fresh berries and ripe bananas add natural sweetness and nutrition. Pancakes and scrambled eggs can be stored in the fridge for up to 2 days and reheated gently.
