  • 3 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce (use tamari for gluten-free)
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • Optional garnishes: chopped fresh cilantro or green onions

Instructions

  1. Rinse 1 pound of large peeled and deveined shrimp under cold water, then pat dry thoroughly with paper towels.
  2. In a medium bowl, whisk together 3 tablespoons honey, 2 tablespoons sriracha sauce, 2 minced garlic cloves, 1 tablespoon fresh lime juice, 1 tablespoon soy sauce, and 1 teaspoon smoked paprika. Season with salt and black pepper. Adjust sriracha to taste.
  3. Add the shrimp to the bowl with the glaze and toss until each piece is well coated. Let sit for 10 to 15 minutes at room temperature.
  4. Preheat grill or grill pan to medium-high heat (around 400°F). Lightly oil the grates or pan.
  5. Thread 4-5 shrimp onto each skewer, keeping them snug but not overcrowded.
  6. Grill the shrimp skewers for 2-3 minutes per side, brushing with extra glaze once or twice while cooking. Shrimp are done when bright pink-orange and slightly curled.
  7. Serve immediately, garnished with chopped cilantro or green onions if desired.

Notes

Do not over-marinate shrimp to avoid mushiness; 15 minutes max. Pat shrimp dry before glazing for better caramelization. Use metal skewers if possible or soak wooden skewers for at least 30 minutes to prevent burning. Flip shrimp only once during grilling. Keep extra glaze handy to brush on during cooking and before serving. If no grill is available, broil or pan-sear as alternatives.
