Instructions

  1. In a small bowl, combine 1 ¼ cups milk with 1 tablespoon fresh lemon juice. Stir and let sit for 5-10 minutes to simulate buttermilk.
  2. In a large bowl, whisk together sifted flour, baking powder, baking soda, sugar, and salt until evenly mixed.
  3. In a separate bowl, beat the egg, then add the lemon-infused milk, melted butter, and vanilla extract (if using). Whisk gently until combined.
  4. Pour the wet mixture into the dry ingredients. Stir with a spatula or wooden spoon just until combined; a few lumps are okay. Do not overmix.
  5. Let the batter rest for 5 minutes to activate the leavening agents.
  6. Preheat a non-stick skillet or griddle over medium heat until hot but not smoking.
