  • 1 cup (240 ml) plain Greek yogurt (full-fat or 2%)
  • 1 cup (90 g) rolled oats
  • 2 large eggs (room temperature)
  • Optional: 1 tsp vanilla extract
  • Optional: 1 tsp cinnamon
  • Optional: fresh berries for folding in or topping
  • Optional: 1 tbsp milk or water (if batter is too thick)
  • Optional vegan substitute: 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)

Instructions

  1. Place 1 cup (90 g) of rolled oats into a blender or food processor. Blend on high speed for about 30 seconds or until you get a fine powder resembling flour. Set aside.
  2. In a mixing bowl, crack 2 large eggs and whisk until the yolks and whites are fully combined.
  3. Stir in 1 cup (240 ml) of plain Greek yogurt until smooth and creamy. Add vanilla extract if using.
  4. Gradually add the oat flour to the wet mixture, folding gently with a spatula until the batter is thick but pourable. Add a tablespoon of milk or water if too thick.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Spoon about 1/4 cup (60 ml) of batter per pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  7. Flip carefully and cook for another 2 minutes until golden and cooked through. Do not press down on pancakes while cooking.
  8. Serve warm with your favorite toppings such as fresh fruit, nuts, syrup, or extra Greek yogurt.

Notes

Use room temperature eggs for best results. Blend oats fresh into flour for a lighter texture. Avoid overmixing the batter to keep pancakes fluffy. Cook on medium heat and flip only when bubbles appear and edges are set. Keep cooked pancakes warm in a low oven (200°F / 90°C) if making in batches. For vegan version, substitute eggs with flax egg and use dairy-free yogurt, though texture may be less fluffy.
