  • 1 cup (150 g) cherry tomatoes, halved (optional)
  • 1 medium red bell pepper, diced
  • 2 stalks green onion, sliced thinly
  • ¼ cup fresh cilantro, chopped (optional)
  • 2 tablespoons pickled jalapeños, chopped
  • 1 small avocado, diced
  • Juice of 1 large lime
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika (optional)
  • Salt and black pepper to taste

Instructions

  1. Drain and rinse the black beans under cold water until clear. Set aside to drain completely (about 2 minutes).
  2. Dice the red bell pepper into small pieces (about ½-inch). Halve the cherry tomatoes. Slice the green onions thinly. Chop the pickled jalapeños finely. Chop the cilantro if using. Dice the avocado last to avoid browning.
  3. In a large mixing bowl, combine the drained black beans, corn kernels, diced bell pepper, tomatoes, green onions, jalapeños, and cilantro.
  4. In a small bowl, whisk together lime juice, olive oil, ground cumin, smoked paprika, salt, and black pepper (start with ½ teaspoon salt and ¼ teaspoon pepper). Adjust seasoning after mixing.
  5. Pour the dressing over the bean and vegetable mixture. Gently fold in the diced avocado last, being careful not to mash it. Toss gently until evenly coated.
  6. Chill the dip in the refrigerator for at least 30 minutes to allow flavors to meld. Taste and adjust salt or lime juice before serving.
