A light and refreshing summer spritzer combining fresh cucumber, elderflower syrup, sparkling water, and fresh herbs like mint and basil. Perfect for warm evenings and easy to prepare in under 10 minutes.

Ingredients

Scale
  • 1 medium cucumber, peeled and thinly sliced
  • 2 tablespoons elderflower syrup
  • 2 cups (500 ml) sparkling water
  • 68 fresh mint leaves
  • 68 fresh basil leaves
  • 1 tablespoon freshly squeezed lemon juice
  • Ice cubes as needed
  • Optional garnish: thin cucumber ribbons or edible flowers

Instructions

  1. Peel and thinly slice 1 medium cucumber. Optionally, lightly press the slices with a fork or pulse briefly in a blender without pureeing.
  2. Place the mint and basil leaves in a mixing pitcher or large glass jar. Gently muddle with a muddler or the back of a wooden spoon about 10-15 times to release oils without bitterness.
  3. Add 2 tablespoons elderflower syrup and 1 tablespoon freshly squeezed lemon juice to the muddled herbs. Stir gently to combine.
  4. Add the cucumber slices and enough ice cubes to fill the pitcher about halfway.
  5. Slowly pour in 2 cups (500 ml) sparkling water and stir gently to mix without losing fizz.
  6. Taste and adjust sweetness by adding more elderflower syrup in small increments if desired, or add more lemon juice if too sweet.
  7. Serve immediately in chilled tall or stemmed glasses, garnished with cucumber ribbons or edible flowers if desired.

Notes

Muddle herbs gently to avoid bitterness. Chill cucumber and sparkling water beforehand if possible. Add sparkling water just before serving to preserve bubbles. Adjust elderflower syrup to taste. Use fresh herbs for best flavor. Optional to strain for a clearer spritzer.
