Fresh Watermelon Mint Agua Fresca with Lime

A quick and refreshing summer drink combining fresh watermelon, mint, and lime for a perfectly chilled and light beverage.

  • 4 cups fresh seedless watermelon, cubed
  • 1520 fresh mint leaves, plus more for garnish
  • Juice of 2 medium limes (about 3 tablespoons)
  • 2 cups cold water
  • 12 tablespoons agave syrup, honey, or sugar (adjust to taste)
  • Ice cubes as needed for serving

Instructions

  1. Cut about 4 cups of seedless watermelon into chunks. Place them in a blender and puree until smooth, about 30-45 seconds. For a pulp-free drink, strain the puree through a fine mesh strainer into a large pitcher, pressing gently to extract all juice.
  2. Place 15-20 fresh mint leaves into the pitcher. Using a muddler or the back of a wooden spoon, gently press the leaves to release their oils without pulverizing them, about 1-2 minutes.
  3. Squeeze the juice of 2 medium limes directly into the pitcher. Add 1-2 tablespoons of your chosen sweetener and stir gently to combine. Taste and adjust sweetness or lime as needed.
  4. Pour in 2 cups of cold water to lighten the mixture. Stir again, then refrigerate for at least 30 minutes to let flavors meld and chill. Alternatively, add ice cubes to cool quickly.
  5. Fill glasses with ice cubes and pour the agua fresca over. Garnish with extra mint leaves or a lime wedge and serve immediately.

Notes

Use ripe watermelon for best sweetness. Do not over-muddle mint to avoid bitterness. Adjust sweetness gradually as cold temperatures dull sweetness. Fresh lime juice is preferred over bottled. Can substitute fresh basil if mint is unavailable. For a sparkling version, use sparkling water instead of still water. Store leftovers in the refrigerator up to 24 hours and stir gently before serving again.
