Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease a 9-inch cake pan or cast-iron skillet with butter.
  2. Make the caramel topping: Melt 4 tablespoons unsalted butter over medium heat in a small saucepan. Stir in ยฝ cup brown sugar until dissolved and bubbling gently, about 2-3 minutes. Remove from heat and stir in 2 tablespoons bourbon if using. Pour evenly into the prepared pan.
  3. Arrange the peeled peach slices evenly over the caramel layer in the pan.
  4. In a medium bowl, whisk together 1ยฝ cups flour, 1ยฝ teaspoons baking powder, and ยฝ teaspoon salt. Set aside.
  5. In a large mixing bowl, beat 6 tablespoons softened butter with ยพ cup granulated sugar until pale and fluffy, about 3-5 minutes.
  6. Beat in 2 large eggs one at a time, fully incorporating each before adding the next. Stir in 1 teaspoon vanilla extract.
  7. Gradually add the dry flour mixture alternately with ยฝ cup milk, beginning and ending with flour. Mix gently until just combined.
  8. Pour the batter evenly over the peach and caramel layer. Smooth the top with a spatula if needed.
  9. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean and edges pull away slightly from the pan.
  10. Cool the cake for 10-15 minutes. Run a knife around the edges to loosen, then invert onto a serving plate to reveal caramelized peaches on top.
  11. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

Use medium heat and stir constantly when making caramel to avoid burning. For more intense peach flavor, macerate peach slices with sugar and bourbon for 15 minutes before layering.
