  • 68 lb bone-in fully cooked ham (spiral-sliced preferred)
  • 1 cup packed dark brown sugar
  • 1/2 cup bourbon (e.g., Maker’s Mark or Buffalo Trace)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves (optional)
  • 1 teaspoon garlic powder
  • 1/2 cup water

Instructions

  1. In a mixing bowl, whisk together brown sugar, bourbon, Dijon mustard, apple cider vinegar, ground cinnamon, ground cloves, and garlic powder until smooth (about 5 minutes).
  2. Remove packaging from the ham and pat dry with paper towels. Keep spiral slices intact if applicable.
  3. Pour 1/2 cup water into the bottom of the slow cooker to create steam and keep the ham moist. Place the ham cut-side down in the slow cooker.
  4. Using a basting brush, coat the ham evenly with about half of the bourbon glaze, making sure to get into crevices.
  5. Cover and cook on LOW for 4-6 hours. About halfway through, brush the ham with the remaining glaze to build layers of flavor.
  6. In the last 30 minutes, uncover the slow cooker and increase the temperature to HIGH to thicken the glaze slightly. Watch carefully to prevent burning.
  7. Remove the ham carefully and let it rest for 10 minutes before slicing to allow juices to redistribute.

Notes

Keep the slow cooker covered most of the time to prevent the glaze from burning. For a more caramelized crust, transfer the ham to a baking sheet and broil for 3-5 minutes after slow cooking. Adding water to the slow cooker is essential to keep the ham moist. The glaze can be made up to 2 days ahead and stored in the fridge.
