Perfect Peach Bellini Popsicles

Refreshing adult popsicles made with fresh peaches and sparkling prosecco, perfect for warm-weather gatherings and easy to prepare.

  • 34 medium fresh peaches, peeled, pitted, and sliced
  • 1 cup (240 ml) sparkling prosecco (dry or extra dry)
  • 23 tablespoons granulated sugar (adjust based on peach sweetness)
  • 1 tablespoon fresh lemon juice
  • 1/4 cup (60 ml) water
  • Optional: fresh mint leaves or a splash of peach schnapps

Instructions

  1. Prep the peaches by peeling and pitting 3 to 4 ripe peaches. Score an “X” at the bottom, blanch in boiling water for 30 seconds, then plunge into ice water. Peel skins off and slice roughly.
  2. Add peach slices to a blender with 2 to 3 tablespoons sugar, lemon juice, and 1/4 cup water. Blend until silky smooth, like a thick fruit smoothie. Taste and adjust sweetness or lemon as needed.
  3. Pour the peach puree into a mixing bowl and gently fold in 1 cup sparkling prosecco, being careful not to stir vigorously to preserve bubbles.
  4. Pour the mixture into popsicle molds, leaving space at the top for expansion. Add fresh mint leaves or peach schnapps if desired. Insert sticks and place molds in the freezer.
  5. Freeze for 6-8 hours or overnight until fully solid. For best texture, do not rush freezing.
  6. To unmold, run warm water over the outside of the molds for a few seconds and gently pull the popsicles free. Serve immediately.

Notes

Use ripe peaches for best flavor. Blanch peaches to easily remove skins. Fold prosecco gently to keep bubbles. Leave space in molds for expansion. For smoother texture, optionally add a tablespoon of vodka. Non-alcoholic version can be made by substituting prosecco with sparkling water or lemon-lime soda.
