A fast and easy homemade strawberry jam recipe made in the microwave without pectin, ready in just 10 minutes. Perfect for busy mornings or sudden cravings.

Ingredients

  • 2 cups (300 grams) fresh strawberries, hulled and roughly chopped
  • 3/4 cup (150 grams) granulated sugar
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • 2 tablespoons (30 ml) water

Instructions

  1. Rinse and hull about 2 cups (300 grams) of fresh strawberries. Chop into halves or quarters depending on your texture preference. (5 minutes)
  2. In a microwave-safe bowl, combine strawberries, 3/4 cup (150 grams) granulated sugar, 2 tablespoons (30 ml) freshly squeezed lemon juice, and 2 tablespoons (30 ml) water. Stir gently to coat the berries evenly. (2 minutes)
  3. Cover the bowl loosely and microwave on high for 2 minutes. Remove, stir gently, smashing some berries with the back of the spoon to release juices. Repeat microwaving for 2 more minutes, stir again. Then microwave for a final 3 minutes. (Total ~7 minutes)
  4. Carefully remove from microwave (it will be hot!). The jam should be thickened but still spreadable. If too runny, microwave for additional 30-second bursts, stirring each time until desired thickness is reached.
  5. Let the jam cool in the bowl for about 10 minutes, then transfer to a clean jar or container. It will thicken further as it cools. (10 minutes)

Notes

Use ripe but firm strawberries for best texture. Stir often during microwaving to avoid burning. Use a microwave-safe cover loosely to prevent splatters but allow steam to escape. If jam is too runny after cooking, microwave in 30-second intervals, stirring each time until thickened. Lemon juice helps jam set naturally without pectin. Avoid thin glassware to prevent cracking.
