Refreshing Watermelon Mint Popsicles

These popsicles are a simple, refreshing summer treat made with just watermelon, fresh mint, and lime juice. Perfect for cooling off on hot days with natural sweetness and a minty twist.

Ingredients

  • 4 cups (600 grams) seedless watermelon, cubed
  • 1/4 cup fresh mint leaves, loosely packed
  • 2 tablespoons fresh lime juice (about the juice of one lime)
  • Optional: 1 teaspoon honey or agave syrup (if watermelon is not sweet enough)
  • Optional: pinch of salt

Instructions

  1. Cut about 4 cups (600 grams) of seedless watermelon into cubes, removing as many seeds as possible.
  2. Place watermelon cubes and 1/4 cup fresh mint leaves into a blender. Blend on high for 30-45 seconds until smooth with visible green flecks from the mint.
  3. Add 2 tablespoons fresh lime juice and blend briefly to mix.
  4. Optional: Pour the mixture through a fine mesh strainer into a bowl if you prefer a smoother popsicle without pulp.
  5. Pour the mixture evenly into popsicle molds, leaving space at the top for expansion.
  6. Insert popsicle sticks, cover, and freeze for at least 4-6 hours or overnight until solid.
  7. To unmold, run warm water on the sides of the molds for a few seconds and gently pull the sticks to release the popsicles.

Notes

Use ripe watermelon with a creamy yellow spot for best sweetness. Avoid over-blending mint to prevent bitterness. Silicone molds make unmolding easier. Freeze overnight for firm popsicles. You can substitute mint with basil or cilantro, or add honey if watermelon is not sweet enough.
