A quick and easy savory pie featuring a flaky puff pastry crust layered with creamy goat cheese, fresh herbs, and vibrant heirloom tomatoes. Perfect for summer gatherings and busy weeknights.

  • 3 cups heirloom tomatoes, thinly sliced
  • 1 package puff pastry sheets, thawed
  • 4 ounces goat cheese, softened
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard (optional)
  • 1 large egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry sheet onto the lined baking sheet. If thick, roll out gently to about 12×12 inches for a thinner crust. Prick the base all over with a fork. Brush the surface lightly with Dijon mustard, if using.
  3. In a bowl, combine softened goat cheese, minced garlic, chopped basil, salt, and pepper. Stir until creamy and well blended.
  4. Spread the cheese mixture evenly over the puff pastry, leaving about a 1-inch border around the edges. Layer the sliced heirloom tomatoes on top, overlapping slightly.
  5. Drizzle olive oil over the tomatoes, then sprinkle with salt, pepper, and grated Parmesan cheese. Fold the edges of the puff pastry up and over the filling to create a rustic border.
  6. Brush the puff pastry edges with the beaten egg for a golden, glossy finish.
  7. Bake for 25-30 minutes until the crust is puffed and golden and the tomatoes are tender but hold their shape. Check after 20 minutes to avoid burning.
  8. Let the pie cool for about 10 minutes on a cooling rack before slicing and serving.

Notes

Pat tomato slices dry before layering to prevent soggy crust. Keep puff pastry cold until just before baking for best puff. Use a fork to prick pastry base to reduce bubbling. Let pie rest after baking to set filling for neat slices. Avoid microwaving leftovers to keep crust crisp.
