Instructions

  1. Mix the Salt Solution: In a small bowl, combine 1 teaspoon (6 grams) of fine kosher salt with 1 to 2 tablespoons (15-30 ml) of warm water. Stir until the salt dissolves completely.
  2. Prepare the Dough: If your dough has already been mixed and proofed but is unsalted, gently transfer it onto a lightly floured surface.
  3. Apply the Salt Solution: Using your fingers or a pastry brush, drizzle the salt water evenly over the surface of the dough.
  4. Incorporate the Salt: Knead the dough gently but thoroughly for about 3 to 5 minutes to distribute the salt evenly without deflating the dough’s air pockets. Dust lightly with flour if sticky.
  5. Rest the Dough: Place the dough back into a greased bowl, cover with a damp cloth or plastic wrap, and let it rest for 20 to 30 minutes.
  6. Shape and Proof: Shape your dough into a loaf or rolls and allow a second rise for about 45 to 60 minutes until nearly doubled in size.
  7. Bake: Transfer your dough to a preheated oven at 375°F (190°C). Bake for 25 to 35 minutes until the crust is golden and sounds hollow when tapped.
  8. Cool: Let the bread cool on a wire rack for at least 30 minutes before slicing.
