  • 2 tablespoons brown sugar (light or dark)
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt (kosher or sea salt preferred)
  • Optional: black pepper or a pinch of cayenne pepper

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Remove the silver skin membrane on the back of the ribs if possible.
  3. In a mixing bowl, combine 2 tablespoons brown sugar, 1 tablespoon smoked paprika, and 1 teaspoon salt. Stir well to blend evenly.
  4. Pat the ribs dry with paper towels. Rub the dry mix all over the ribs, pressing it into the meat on both sides.
  5. Place the ribs on a large piece of aluminum foil and wrap tightly to trap steam and keep the meat moist during cooking.
  6. Place the wrapped ribs on a baking sheet or wire rack and bake in the preheated oven for 2.5 to 3 hours until the meat is tender and pulls away from the bone easily.
  7. Optional: Unwrap the ribs carefully, brush with your favorite BBQ sauce, and place under the broiler for 3-5 minutes to caramelize the surface. Watch closely to avoid burning.
  8. Let the ribs rest for 5-10 minutes before slicing between the bones to help juices redistribute.

Notes

Remove the membrane for more tender ribs. Wrap ribs tightly in foil to trap steam and keep moist. Low and slow cooking at 300°F is key for tender ribs. Optional broiling with BBQ sauce caramelizes the surface. Leftovers can be reheated wrapped in foil at 300°F for 15-20 minutes. Avoid microwaving to maintain texture.
